#### Ingredients:

** For the mousse: **
- 200g of dark chocolate (70% cocoa)
- 300ml of fresh cream
- 4 large eggs
- 4 tablespoons of refined sugar
- 1 teaspoon vanilla extract
- 8 cardamomo capsules

** For crystallized orange: **
- 2 large oranges
- 200g of sugar
- 250ml of water

** To decorate: **
- Chocolate shavings
- Fresh mint leaves

#### Preparation Mode:

** 1.Cardamom Preparation: **
- Start by opening the cardamom capsules with the help of a knife and extracts the seeds.
- Using a pestle, grind the seeds until they become a thin powder.

** 2.Chocolate mousse: **
- Break the chocolate into small pieces and place in a heat resistant bowl.
- In a small pan, heat half the cream until it begins to boil.Pour over the chocolate and let stand for 1 minute.Mix well until the chocolate melts completely and the mixture is homogeneous.
- Add the cardamom powder and mix well.
- In the mixer, beat the egg yolks with the sugar until it forms a whitish mixture.Add the vanilla extract and mix to the melted chocolate.
- In another bowl, beat the egg whites until they form firm peaks and gently incorporate them into the chocolate mixture.
- Then beat the remaining cream of whipped cream and incorporate into the mixture.
- Pour the mousse into individual cups and refrigerate for at least 4 hours.

** 3.Crystallized orange: **
- Wash the oranges and cut them into thin slices.
- In a pan, mix the water and sugar and bring to medium heat until the sugar dissolves.Add the orange slices and cook over low heat for about 40 minutes, or until the shells become translucent.
- Use a slot to remove the orange slices from the syrup and place them on a grid to cool.

** 4.Assembly and Decoration: **
- Remove the mousses from the refrigerator.
- Decorate each bowl with crystallized orange slices, chocolate shavings and a mint leaf.

#### Tips:
- For a more intense orange flavor, add orange zest to the mousse along with the cardamom.
- Make sure all ingredients are at room temperature to facilitate the process.
