Recipe: Yakitori (Japanese chicken skewer)

Yakitori is one of the most beloved street foods in Japan. It consists basically of grilled chicken skewers, which are marinated in tare sauce, a sweet and salty condiment.This recipe respects the Japanese tradition, offering an authentic and delicious result.
#### Ingredients:
##### For the tare sauce:
- 1/2 cup of shoyu (Japanese soy sauce)
- 1/2 cup of mirin (Japanese rice wine)
- 1/4 cup of sake
- 2 tablespoons of sugar
- 1 small piece of sliced ginger
##### to Yakitori:
- 600 g of boneless chicken thigh, cut into cubes
- Green onions cut into pieces of 3 cm
-black pepper to taste
- Vegetable or sesame oil (for grilling)
- Bamboo sticks for skewers (soaked in water for at least 30 minutes before using)
#### Preparation Mode:
##### Sauce Preparation Ta:
1. In a small pan, combine soyu, mirin, sake, sugar and ginger.
2. Bring to medium-high heat and bring to a boil.Reduce the heat and cook for about 20 minutes, or until the sauce reduces and is slightly thick.Remove from heat and let cool.
3. Strain the sauce to remove the slices from ginger.
##### Smokers Assembly:
1. Prepare the skewers alternating pieces of chicken and green chives in previously wet bamboo sticks.
2. Season slightly with salt and black pepper.
##### Grill the skewers:
1. Heat a large grill or skillet over medium-high heat and brush with a little oil.
2. Put the skewers on the grill and cook, turning occasionally until the chicken starts to get golden, about 3 to 4 minutes.
3. Brush the skewers with the tare sauce and continue grilling, turning often and brushing with more sauce with each turn, for another 5 to 7 minutes, or until the chicken is completely cooked and very caramelized.
##### Serving:
1. Arrange the skewers on a plate and brush with a little more tare sauce before serving.
2. Accompany with Japanese rice and, if desired, a little Wasabi or pickled ginger.
