**Description:**
This snack not only satisfies the taste buds with the combination of grilled chicken and a fresh, homemade pesto, but it also comes with roast rustic potatoes, creating a complete and delicious dish for any time.

** Ingredients **:

*For the sandwich*:
- 2 chicken breasts
- 4 slices of Italian bread or your preference
- 4 lettuce leaves
- 2 tomatoes, sliced
- Salt and pepper to taste
- olive oil to grill

*For the pesto sauce*:
- 2 cups of fresh basil leaves
- 1/2 cup grated Parmesan
- 1/2 cup of walnuts or pine nuts
- 2 cloves of garlic
- 3/4 cup extra virgin olive oil
- Salt and pepper to taste

*For rustic potatoes*:
- 4 large potatoes, washed and cut into buds
- 2 tablespoons of olive oil
- 1 teaspoon of dry or fresh rosemary
- 1 teaspoon of coarse salt
- 1/2 teaspoon of ground black pepper

** Preparation mode **:

*For the chicken*:
1. Season the chicken breasts with salt and pepper.
2. Heat a skillet or grill and add a little olive oil.
3. Place the chicken breasts to grill until they are very golden and cooked inside (about 6-7 minutes on each side, depending on the thickness).
4. Let stand for a few minutes and slice them.

*For the pesto sauce*:
1. In the food processor, add the basil leaves, Parmesan, walnuts (or pine nuts), garlic, and a pinch of salt and pepper.
2. Pulse until everything is well crushed.
3. With the processor still turned on, add the olive oil to a constant flow until the sauce is homogeneous.Adjust salt and pepper to taste.

*For rustic potatoes*:
1. Preheat the oven to 200ºC.
2. In a large bowl, mix the potatoes with olive oil, rosemary, salt and pepper.
3. Spread the potatoes in a single layer in a baking dish.
4. Bake for about 35-40 minutes or until golden and crispy, turning them halfway through cooking.

*Sandwich assembly*:
1. Toast slightly the slices of bread.
2. Rub a little of the pesto sauce in each slice.
3. Place a layer of lettuce, followed by tomato slices and grilled chicken.
4. Finish with another layer of pesto, if desired, and cover with the other slice of bread.

**Service**:
Serve the sandwich immediately accompanied by the roasted rustic potatoes.This meal combines perfectly with fresh juice or lemonade.
