Sauerbraten recipe (beef roast in bittersweet sauce)

Sauerbraten is one of the most classic dishes of German cuisine.Known as the German Roast Beef, it is marked in a vinegar mixture and spices before being cooked slowly, resulting in a juicy meat and a rich sauce.

### Ingredients:

- 1.5 kg of beef (preferably rump or chest)
- 500 ml of red wine vinegar
- 500 ml of water
- 2 medium onions, cut into rooms
- 2 carrots, cut into large pieces
- 2 celery stalks, cut into large pieces
- 1 leeks, white part cut into large pieces
-10 grains of black pepper
- 4 bay leaves
-6 blackheads
- 1 tablespoon of mustard seed
- 1 tablespoon of salt
- 2 tablespoons of oil or lard
- 2 tablespoons of brown sugar
- 100 g raisins (optional)
- 2 tablespoons of wheat flour
- Salt and pepper to taste to adjust the spice

### Preparation:

#### 1. Preparing the marinade:
1. In a large pan, combine the red wine vinegar and the water.Add the onions, carrots, celery, leeks, black pepper grains, blur leaves, cloves, mustard seed and 1 tablespoon salt.
2. Take the mixture to a boil, then reduce the heat and boil for about 10 minutes.
3. Let the marinade cool completely.

#### 2. Marinating the meat:
1. Place the meat in a large container and pour the cold marinade over it.Make sure the meat is completely submerged.
2. Cover and cool for 2 to 3 days, turning the meat at least once a day.

#### 3. Cooking the meat:
1. Remove the meat from the marinade and dry it with paper towels.Strain the marinade and set aside vegetables and liquids separately.
2. In a large pan, heat the oil or the lard.Add the meat and brown it well on all sides.
3. Add the reserved vegetables and continue to cook over medium heat until they are golden brown.
4. Sprinkle brown sugar over meat and vegetables and let it caramelize lightly.
5. Add the flour and cook for a minute, stirring constantly.
6. Gradually add the strained marinade.If you are using, add the raisins.
7. Reduce the heat, cover the pan and cook slowly for 2 to 3 hours, or until the meat is very soft.

#### 4. Finishing the dish:
1. Remove the meat from the pan and slice it.
2. If necessary, cook the sauce over high heat for a few minutes to reduce it a little or until it reaches the desired consistency.Adjust the seasoning with salt and pepper.
3. Serve the sliced ​​meat with the sauce on top.
